Smoked Andouille

The latest chicken sausage we tried from Trader Joe's was the smoked andouille. Andouille is a smoked sausage by definition (so the name is a little redundant), usually made with pork. We've liked it whenever we've had it before, so we were interested to see what the Trader Joe's version tasted like.

We've had andouille most often in Creole or Louisiana cuisine in dishes like jambalaya and gumbo, but instead of doing that with this one, we mixed it in a basic saute with kale, mushrooms, and onions. We find that making them this way gives us a much better idea of how they taste for our first try and if we like them, we can figure out how to use them in other things later.

We liked the andouille sausage but thought it would have a stronger flavor and more of a smoky flavor than it did. The flavors mostly come from "chicken seasoning" (salt, spices, mustard, garlic, paprika) and more paprika. It was good, but probably could have used some smoked paprika to give it a more vibrant flavor.

Buy Again? Sure, but not our favorite sausage from TJ's.

Our TJ's sausage rankings:
1. Korean inspired spicy chicken sausage
2. Smoked andouille (A) / Turkey cranberry apple sausage (M)
3. Reverse #2.
4. Sweet Italian style chicken sausage
