I didn't eat a lot of celery growing up (family allergies), but we try to regularly buy it from Costco these days. We've been trying various dishes with celery but I just wanted to mention a great simple recipe in case you're looking for something new or different to do with celery. I'm always looking for a tasty alternative to celery sticks and dip (because I really don't want to resort to that to use up the celery).
This recipe from Ricardo Larrivée on the Food Network Canada site is so simple. One bunch of celery (with leaves), one head of garlic, olive oil and salt (I also added freshly ground black pepper). Roasts in the oven for about 20 minutes and it's done. Definitely worth a try.
