Babbo: First Course

M started writing our culinary journey at Babbo here. As mentioned, we got the pasta tasting menu with wine accompaniment. Our first course was one of my favorites.

Black Tagliatelle with Peas and Castelmagno

Even though the pasta had a cream sauce, it was very light. The fresh peas were so flavorful, and they added a very fresh and clean flavor to the dish. I had never tasted actual fresh peas before, but if they all taste like this then I definitely need to eat more. For lack of a better description, they were just so full of clean, pea flavor. Being avid fans of Top Chef, M and I both now understood why fresh pea puree could make a dish so delicious.

The paired wine was the Controguerra "Ciafre" Illuminati 2007. It was very clean, crisp, and had hints of fruit. The crispness of the wine helped contribute to the lightness of the dish.
